If you’re going to be riding the mountains all day, you’re going to need to refuel. That’s why we have The GAP kitchen. It’s our own in-grounds restaurant, with locally sourced ingredients and sustainability at its heart. When we created this, our number one goal was to have mother nature be our number one priority. We made a decision right from the start to have as low an impact on the earth as possible. Therefore our disposable cups, lids, plates, cutlery and glasses are all made from compostable and biodegradable materials.

At the GAP, we believe in only the highest quality ingredients, making everything fresh and in-house as possible. With this in mind, our kitchen uses only the best locally sourced produce. Our fresh meat is Irish and provided by Traditional Master Butcher Frank Doyle from Bray, County Wicklow. Another thing we’re proud of is our house relish. Here at the kitchen we slow-cook our relish from scratch and use it for as many delicious pairings as possible, including our beef, veggie, and breakfast burgers.
With ingredients like these, how could we mess with perfection. We keep things simple. That means we don’t needlessly process the meat with breadcrumbs or preservatives. We form our delicious burgers by hand, smash them into patties on the grill, and hit them with a sprinkle of salt for maximum beefiness. Our buns are hand made by the Keegan family in Bray by Husband and wife team Kim and Steve, and we collect them every day to make sure there as fresh as possible. With burgers this good, everything else needs to match in quality.
